Round grain rice.

How to Cook

Wash 300g of rice under the tap in a sieve until the water runs clear, then soak rice for 30 minutes. 

Drain the water then add the rice to a pan with 300ml water.  Cover the pan and bring to the boil. 

Boil for 5 minutes then reduce the heat to low (keeping the lid on).

Allow to simmer for 10 minutes before removing from the heat. 

Leave the rice to stand covered for 10 more minutes.

How to Season

Mix 2tbsp Japanese Rice Vinegar with 2bsp mirin (rice wine), add 1tsp white sugar and 1/2 tsp salt then gently heat and mix for 1 minute. 

Place the cooked rice in a bowl and pour over the vinegar mixture, carefully folding into the rice. 

Once mixed together, leave the rice to cool.
